
Vegan raw broccoli salad
I already know what you’re thinking. Broccoli and raw do not belong in the same sentence. At least that’s what I thought when I heard about this vegan raw broccoli salad. It all changed the moment I tasted it though. Now it’s a favorite one in our household. This salad is crunchy, tangy, and fresh. The sweet-and-savory combination of almonds and dried cranberries work surprisingly well.
Easy to make vegan raw broccoli salad
I remember having this salad for the first time at church made by one of the loveliest people I know. I wasn’t fully vegan then, but now that I am, it is time for a vegan option. It will never be as good as hers, but this one is pretty amazing, too! From picnics in the park to backyard cookouts and everything in between, this vegan raw broccoli salad is the way to go. It’s a one-bowl recipe that you can easily make days ahead – the longer it marinates, the more delicious it will be.
Raw & vegan broccoli salad tips

As already mentioned, this salad is very easy to make. If you keep these tips in mind, you will have an even better-tasting salad.
Cut the broccoli as small as possible.
This will soften the broccoli and let it easily absorb the flavors of the dressing
Let it marinate
It’s delicious when served right after it’s done. If you wait an hour it will taste great, but if you wait a day, or two, it will be even more delicious.
Mix well in between
If you let marinate in the fridge for a day or two, make sure to mix it once a day using a spoon. The dressing tends to go to the bottom of the container, so better to mix well to spread the dressing evenly
Waste no more.
Did you know you can eat broccoli stalks too? Use both the broccoli stalk and florets in this recipe. You will be having less food waste and it will add an extra crunch to the recipe.
Pair it up with anything you like.

How long ahead can I make this salad?
I’ve made mine up to 4 days ahead and it was delicious.
Can I use non-vegan mayo?
Of course. Any brand you like will do
Which vegan mayo did you use?
I used Hellman’s vegan mayo. I purchased mine here.
Can I add other veggies?
Most definitely. You can be creative and make it your own.
Do I have to add olive oil?
Not really. The traditional recipe calls for mayo only. Olive oil adds another layer of flavor though, so it’s highly recommended
Can I replace apple cider vinegar with fresh lime juice?
Yes, you can. Be aware that it won’t be as tangy as with ACV.
Can I add more nuts or seeds?
Most definitely. I wanted to keep the costs low so I only added almonds. You can add pumpkin seeds, sunflower seeds, or walnuts. You name it.

Vegan Raw Broccoli Salad
Equipment
- 1 big bowl
- 1 big spoon for mixing
- 1 set of measuring spoons/cups
- 1 knife
- 1 cutting board
Ingredients
Ingredients
- 6 cups finely chopped broccoli around 2 big broccoli heads
- ½ cup diced red onion around 2 big red onions
- ¾ cup almonds or any other nut/seed mix
- ¾ cup dried cranberries
Dressing
- 1 cup vegan mayo + 1 extra tablespoon
- 3 tbsp agave syrup
- ¼ cup apple cider vinegar or fresh lime juice
- ¼ cup extra virgin olive oil
- ¼ tsp salt add more if needed
- ¼ tsp onion powder add more if needed
- ¼ tsp ground pepper add more if needed
- ¼ tsp garlic powder add more if needed
Instructions
- cut broccoli florets and stalks as small as possible
- dice onions
- In a big bowl whisk all dressing ingredients mentioned above until smooth
- Add the broccoli, onions, almonds, and cranberries to the dressing bowl and toss to coat.
- Can be served immediately but let it marinate for at least an hour for optimal flavor. After 2 days it will taste even better.
