VEGAN PEANUT BUTTER COOKIES

To be totally honest, I wasn’t sure this recipe would taste good. I had an extra peanut butter jar I received as a gift so I thought why not  give it a try? (I’m very easy when it comes to gifts, just give me food or plants). I was quite shocked – in a good way – when I tasted the finished product.

These cookies are the epitome of goodness and the perfect balance between sweetness and crunchy. Even though I believe there is no such thing as too much peanut butter, these cookies portrait the perfection of just enough peanut butter flavor. To make things better, they are vegan and very easy to make using everyday ingredients.

  1. Preheat oven to 190°C
  2. Add the sugar and vegan butter to a mixer and beat them together until creamy. Add the peanut butter and vanilla extract and mix in.
  3. Use another bowl and add the flour, baking soda, baking powder and salt
  4. Add the dry ingredients (step 3) to the wet ingredients (step 2) and mix by hand until a dough is formed
  5. This step will decide whether you need to add plant based milk or not. Try to roll the dough into a ball. If it holds then you don't need to add milk. If it crumbles then add 1 tablespoon of milk. If it still crumbles, add another tablespoon. I added 3 tablespoons in total
  6. Roll the dough into balls and place onto a parchment paper lined baking tray
  7. Press lightly with a fork to flatten them (to 2 cm thick)
  8. Sprinkle a little sugar on top
  9. Bake in preheated oven for around 10-15 minutes. When you reach 10 minutes keep watching closely because they can burn fast.
  10. They will be done when they have a golden color
  11. Make sure to let them cool down first *
Recipe Notes

*They will be very soft when they come out of the oven.  Place them carefully on a cooling rack. After 10 -15 minutes they will be firm and ready to eat.
