Equipment

  • 2 Bowls
  • 2 spatulas
  • 1 hand mixer
  • 1 oven
  • 1 set of measuring spoons/cups
  • 1 Cake mold +/- 25 cm diameter.

Ingredients
  

Cake

  • 3/4 cup soy milk Or any other plant-based milk
  • 3/4 cup fresh orange juice Around 7 oranges
  • 1/2 cup olive oil
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 1/2 cup all-purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup brown sugar
  • 5 tbsp fresh orange zest 2-3 oranges

Frosting

  • 2 cups powdered sugar
  • 2 tbsp vegan butter
  • 1 tbsp fresh orange zest
  • 1 tbsp orange juice
  • 1/8 tsp almond extract
  • 1/8 tsp vanilla extract
  • 1/8 tsp salt

Instructions
 

Cake

  • Preheat oven to 175 ℃
  • Mix all dry ingredients in one bowl. These would be the flour, baking powder, salt, and brown sugar. Set aside.
  • In another bowl mix all wet ingredients. These would be the milk, orange juice, olive oil, vanilla & almond extract, and orange zest.
  • Add wet ingredients to dry ingredients and mix. Do not overmix. Simply stir until just combined, otherwise, you will get a dense, chewy cake.
  • Line a cake mold with parchment paper and pour the batter into the prepared mold.
  • Bake for 50 minutes. Baking time may vary depending on the oven and cake mold. Check the cake for doneness 5 minutes before the recommended time by inserting a toothpick into the center of the cake. If it comes out clean, the cake is done.
  • When done, remove it immediately from the cake mold to prevent overbaking. Allow it to cool completely on a cooling rack before slicing

Frosting

  • Add all ingredients to a bowl of a stand mixer and starting at slow speed, gradually increase speed until thick and smooth.
  • If your consistency is too thick, add a little soy milk half a tsp at a time, and if it’s too thin, add 1/4 cup of extra powdered sugar.
  • Spread onto a completely cooled cake and top with fresh oranges.
