Vegan Homemade Fig Jam
Equipment
- 1 medium saucepan
- 1 big wooden spoon
- 1 Airtight, sterilized, jar Check the blog post for sterilizing instructions
- 1 set of measuring cups and spoons
Ingredients
- 3 cups fresh figs Around 12 figs
- 1 1/2 cups brown sugar
- 2 tsp vanilla extract
- 6 cm orange peel
- 6 cm lemon peel
- 2 tbsp fresh lemon juice you can add 1 extra tablespoon if you prefer a more tangy taste.
- 1 small cinnamon stick
- 1/8 tsp salt
Instructions
- In a medium saucepan, combine the chopped figs and sugar. Let it sit for 15 minutes so the sugar can soak the fig's moisture
- After 15 minutes, add the rest of the ingredients. Mix well to combine.
- Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally.
- Once the mixture has come to a boil, reduce the heat to low and let it simmer for about 20 minutes, or until the figs have softened and the mixture has thickened.
- Remove the saucepan from the heat and let the jam cool for a few minutes. Do the plate test mentioned above if you're not sure you got the consistency right.
- Using an immersion blender or a food processor, puree the mixture until it reaches your desired consistency. If you prefer a chunkier jam, you can skip this step. We opted for a chunkier one.
- Transfer the jam to a sterilized jar and let it cool completely.
- Once the jam has cooled, you can store it in the refrigerator.
