
8-ingredient easy & fluffy vegan berry pancakes
The best thing ever? Waking up on a free Saturday morning and having a stack of fluffy & vegan berry pancakes for breakfast. Not just any vegan pancakes, but the fluffiest, and most delicious ones you’ve tasted, made with just 8 easy ingredients you probably have in your pantry right now! I have to admit, it would be even better if I don’t have to get out of bed and someone would make me breakfast. (I’ll be sure to show my husband this blog post). But don’t fret, these vegan & fluffy berry pancakes are really easy to make. You’ll have a stack of pancakes ready in no time so you can keep enjoying your free day without spending too much time in the kitchen.
Easy to make & fluffy vegan berry pancakes ingredients

As already mentioned, this recipe calls for only 8 ingredients, 2 of them being optional.
Flour
I used regular all-purpose flour, but feel free to use pastry flour, spelt flour, or a gluten-free flour mix.
Sugar
I used brown sugar for this recipe but you can easily use maple syrup, agave, or coconut sugar if desired.
Soy milk
Ah! Spanish milk introducing itself. Did you get the joke? Cracks me up every time. Anyway. Any other non-dairy milk will do, such as almond or oat milk.
Extracts
This is totally optional but recommended. It will make your pancakes taste even more delicious. I added vanilla extract and almond extract.
Baking powder
This one will make your pancakes super fluffy, so make sure not to forget this step!
Salt
Like my mama taught me, wherever there is sugar, there must be salt. They go hand in hand and complement each other. So don’t forget this step.
Berries
To make it a berry pancake, I added our superfood berries mix powder. Our berry powder contains 20+ of the planet’s most nutrient-dense fruits and berries. It’s a phytonutrient and antioxidant powerhouse that supports daily vitality and well-being. It contains:

Recipe variations
Chocolate chip
This one is pretty straightforward and you can NEVER go wrong with chocolate. Add your favorite chocolate chips to the batter and then cook as you’d normally do. Top with more chocolate and a dash of coarse sea salt to enhance the flavor. Hopi dushi yu.
Fresh berries
You can always add fresh berries as well. Mix them up or choose your favorite. Make sure to chop them into small pieces before adding them to the batter. Top with more fresh berries and bananas.

Coconut
For this one, you can use canned coconut milk instead of soy milk. Also, add shredded coconut to the batter (around 1 tablespoon) and cook as you’d normally do. Top with more shredded coconut or add a tropical fruit of your choice. Think of passion fruit or pineapple. Nom nom nom!
Peanut butter
Add peanut butter to the batter and cook as you’d normally do. I’d recommend around 1-2 tablespoons of peanut butter. Top with more peanut butter or agave syrup. Yum!

Fluffy vegan berry pancakes FAQ
How long will they stay fluffy?
I honestly always make them fresh and eat immediately. You can always cook the ones you’ll eat and save the batter in the fridge. I’ve stored the batter in the fridge for up to 3 days and it was still fluffy & delicious when cooked.
Are these berry pancakes freezer-friendly?
Yup. Let them cool completely before freezing.
Can these pancakes be made gluten-free?
Totally. Just use gluten-free all-purpose flour instead.
How can I store them properly?
In the fridge in an airtight container will do.
Do I have to add the superfood organic berry mix powder?
Absolutely not. Even though it’s delicious and very healthy, you can add any other variation you’d like. See above for some ideas!
Can I double this recipe?
Most certainly yes!!! This recipe makes between 6-8 pancakes depending on the size. Just double up all the ingredients and follow the same instructions.

Equipment
- 1 big bowl
- 1 big spoon
- 1 measuring spoons/cups
- 1 non-stick pan
- 1 flipping spatula
Ingredients
- 1 1/4 cups all-purpose / spelt flour
- 4 tbsp brown sugar
- 1 tbsp baking powder
- 3/4 cup soy milk + 1 extra tablespoon
- 1/8 tsp almond extract
- 1 tsp vanilla extract
- 2 tsp berry powder
- 1/4 tsp salt
Instructions
- Sift the flour into a mixing bowl and add the sugar, baking powder, salt, and berry powder. Mix well.
- Add the soy milk and extracts to the dry ingredients and mix well.
- The batter will be very thick, but that's okay.
- Heat up a non-stick pan and grease lightly with vegan butter. Make sure the pan is hot, but not smoking hot.
- Cook until you see tiny bubbles forming. Then flip carefully.
- Cook until nicely browned on both sides.
- Let it cool down and top with fresh berries and agave syrup.
