Add the sugar and vegan butter to a mixer and beat them together until creamy. Add the peanut butter and vanilla extract and mix in.
Use another bowl and add the flour, baking soda, baking powder and salt
Add the dry ingredients (step 3) to the wet ingredients (step 2) and mix by hand until a dough is formed
This step will decide whether you need to add plant based milk or not. Try to roll the dough into a ball. If it holds then you don't need to add milk. If it crumbles then add 1 tablespoon of milk. If it still crumbles, add another tablespoon. I added 3 tablespoons in total
Roll the dough into balls and place onto a parchment paper lined baking tray
Press lightly with a fork to flatten them (to 2 cm thick)
Sprinkle a little sugar on top
Bake in preheated oven for around 10-15 minutes. When you reach 10 minutes keep watching closely because they can burn fast.
They will be done when they have a golden color
Make sure to let them cool down first *
*They will be very soft when they come out of the oven. Place them carefully on a cooling rack. After 10 -15 minutes they will be firm and ready to eat.
