If you ever wondered what people mean when they say that simplicity is everything, then you should try this cake. With so many fancy and complicated desserts nowadays, you just sometimes want something easy and simple yet mind blowing delicious. This one bowl vanilla cake, as the name says it already, is made using one bowl and only 10 ingredients. A big thank you goes to www.lovingitvegan.com for this amazing recipe.

Two layers of vanilla cake with a glorious vanilla frosting in the middle AND on top. Pair it with fresh peppermint tea, a great TV show (or a book) and you just described the perfect Friday night (or at least for me 🤪).

Vegan Vanilla Cake

Instructions
Cake
  1. Preheat oven to 180°C
  2. Add flour, sugar, baking soda and salt in a mixing bowl and mix together
  3. Add almond milk, vanilla, coconut oil and vinegar and whisk
  4. Use 2 round cake tins (Around 15cm in diameter) and fit parchment paper to cover bottom and sides
  5. Divide mixture evenly between cake tins
  6. Bake for 30 minutes
  7. When done let it cool down (If you're not sure it's done, insert a toothpick into the center of the cake. If it comes out clean then it's done)
Frosting
  1. Add the frosting ingredients in a bowl and mix with an electric mixer. (Start with a low speed and then slowly increase speed until it's creamy)
  2. You can add more milk if your frosting is too thick. If it’s too thin, add more powdered sugar.
  3. Add frosting to the top of one of the layers then add the second layer on top and add more frosting until fully covered
  4. Ready to eat! Enjoy!
Recipe Notes

Store  in an airtight container at room temperature. It will stay fluffy for about 3 days

I didn't strore it in the fridge, so I don't know if that will keep it fresh longer. If you do, make sure it's in an airtight container
