LEMON POPPY SEED MUFFIN
On today’s menu: Lemon poppy seed muffins. They say when life gives you lemon, make lemonade.
I’m not a fan of lemon in desserts, so I was a little sceptical at first. But these muffins are the definition of balance. Sweet but not too sweet and the lemon after-taste will leave you asking for more.
In every dessert I make, I try to incorporate ingredients that boosts the health factor. In this case I added poppy seeds. Poppy seeds will give your dessert a crunchy bite and, besides that, are very healthy as well. The tiny oil seeds, derived from the poppy plant, are full of nutritional value and have an earthy, nutty flavor.
Because they are so small, poppy seeds are not the handiest snack to eat on their own. They are, however, perfect to add to porridges, smoothies, granola, salad dressings and baked goods.
