Garlic Butter Corn On The Cob
Hello there, my fellow corn lovers! Today, I want to share with you my absolute favorite corn-on-the-cob recipe. To me, corn on the cob is the quintessential summer food. There’s just something about that sweet, juicy corn that makes my mouth water. While classic butter and salt is always a crowd-pleaser, why not take things up a notch with a little bit of garlic butter? Garlic butter is one of those things that can make any dish taste amazing. It’s creamy, buttery, and infused with the rich flavor of garlic. And when you pair it with sweet, juicy corn on the cob, it’s a match made in heaven. It’s simple, delicious, and perfect for any occasion. Whether you’re having a backyard barbecue or a cozy dinner at home, this recipe is sure to impress. So, grab your apron, and let’s get cooking!
How to choose the best corn on the cob
First things first, let’s talk about the star of the show: corn on the cob. Now, I know there are some people out there who are skeptical of corn on the cob. They say it’s too messy or too difficult to eat. But I say, phooey to that! Corn on the cob is one of life’s greatest pleasures. There’s just something so satisfying about sinking your teeth into those sweet, juicy kernels. And when you pair it with a little bit of garlic butter and salt? It’s like a little slice of heaven.
But before we get to the recipe, let’s talk a little bit about how to choose the best one. When it comes to selecting your ears of corn, look for ones that have bright green husks and kernels that are plump and tightly packed together. You want to avoid any ears of corn that have brown spots or dry-looking kernels, as they won’t be as sweet and juicy as fresh corn.

Garlic butter is life
There’s just something about the sweetness of the corn paired with the saltiness of the butter that is unbeatable. And when you use fresh, in-season corn, it’s like the flavor is amplified tenfold.
But here’s a little secret: I don’t just buy garlic butter. Oh no. I use the good stuff. The kind that comes from using fresh garlic and a mortar & pestle. This step is easy and it makes all the difference. I always let the butter sit out at room temperature for a little while before I use it. Use your mortar and pestle – or anything else you have that’s able to mash garlic into a paste- to ground your fresh garlic, add some salt to it and then mix it with the butter.

Garlic Butter Corn Delight: The Recipe
- Shuck the corn. This means removing the outer layers of the husk and silk. You can choose to remove it completely or to be creative and ‘braid’ them. This doesn’t add anything to the flavor but it makes the dish even more beautiful. After all, we eat first with our eyes!
- Fill a large pot with water, add salt and butter, and bring it to a boil.
- Once the water is boiling, carefully add the corn to the pot. You want to make sure the water covers the corn completely.
- Let the corn boil for about 5-7 minutes. You’ll know it’s ready when the kernels are tender.
- While the corn is boiling, mix the butter, garlic paste, and salt together in a small bowl.
- Once the corn is done, use tongs to remove it from the pot and let it cool for a minute or two.
- Now it’s time to slather on that delicious garlic butter. Using a pastry brush, coat each ear of corn with the butter, making sure to every nook and cranny of the corn. Sprinkle with a little bit of salt and pepper, and serve immediately.
- Optional: Top with a mix of chopped tomatoes, cucumbers, and red onions

Creative Toppings
Now, I know some of you might be thinking, “But wait, what about all those fancy corn-on-the-cob recipes with all the crazy toppings?” And don’t get me wrong, I love a good fancy grilled corn with vegan parmesan cheese and herbs. But sometimes, simple is best. And this recipe lets the flavor of the corn shine through.
But, if you’re feeling adventurous, there are plenty of ways to jazz up your corn on the cob. You can add some chili powder and lime juice for a Mexican twist. Or sprinkle on some crumbled feta cheese and fresh parsley for a Mediterranean vibe. The possibilities are endless!
So, the next time you’re at the grocery store or the farmers market and you see that fresh corn on the cob, don’t overthink it. Keep it simple. Boil it up, slather it with butter and salt, and enjoy every last kernel. Trust me, it’s worth it.

This recipe is perfect for summer barbecues and backyard parties. It’s a simple yet impressive side dish that is sure to please everyone. And the best part? You can customize it to your liking.
So, there you have it, folks. My go-to corn-on-the-cob recipe. I hope you give it a try and let me know what you think. And remember, don’t be afraid to experiment and make it your own. Cooking should be fun, after all!
