I used to buy jam in stores and one day I took a minute and checked the ingredients list. I realised that what they claimed to be jam was just some fruit, heated up with sugar and pectin, filled with preservatives and some of them even with artificial flavors and colors.
Since then, whenever I want jam, I make this 15 minutes recipe at home. This one is a low-sugar, all-natural jam that takes only minutes to prepare.
This jam is made with chia seeds. Besides being rich in antioxidants, chia seeds are special because of their gelatine-like properties. Once water is added, they absorb 12 times their body weight, giving off a jelly-like texture. This means that instead of loading up the jam with refined sugar to make it thick, you can use chia seeds instead.
The best thing of this recipe is that you can always use other fruits such as strawberries, blueberries or a mix of both. You can have it unsweetened or sweetened with just a touch of honey/maple syrup instead. Jam at its best.
